How to make the perfect lemon icecream
The lemon ice cream is the most refreshing dinner dessert and it's perfect for summer.
It is a flavor that everyone likes and it is really simple to prepare, you just need lemon juice, water, sugar and cream.
In this recipe we added a small amount of carob flour, which is a natural thickener, that gives a more dense and creamy body to the ice cream.
ingredients:
- Lemons, 400 ml
- Water 200 ml
- Sugar, 220 gr
- Cream, 180 ml
- Carob flour, 5 g
Step1: To prepare the lemon ice cream we start heating up water and cream
Step2: Add sugar and carob flour
Step3: Heat up the mixture until the temperature of 85 ° C
Step4: Let the mixture get cold, and place it immediately in a larger container filled with ice. Leave to cool in the fridge for at least 4-5 hours (so the mixture does not clot when lemon juice is added)
Step5: After this time, squeeze the lemon juice and add it to the cold mixture, mix everything well
Step6: Pour the mixture into an ice cream machine. Put icecream in the freezer for 3 hours and enjoy it!
